Wine Makers Notes: Fine wine is a compelling beauty. Pinot Noir the world’s most exhilarating and exasperating wine. Devotees of this dream wine love it for its haunting aromas of ancient earth and exotic spice with even deeper fruit flavors. This wine with its distinctively piquant sprightly style taste like what I imagine a great wine would taste like in heaven - drinking the stars.

Characteristics: Inextricable from the environment in which it is produced, the vanilla scent of new oak marries nicely with Pinot’s blackberry scent, an inspiration of the cosmos.

Length And Finish: A full-bodied softness that dresses the palate with lingering aftertaste, an iron fist in a velvet glove.

Oak Barrel Notes: Oak and wine support each other in a way that truly brings out the best that both can offer. Barrels have been used throughout the ages. They contribute the tannins and flavor compounds we are looking for in our wines. These tannins have the desirable ability of bonding molecularly with the color pigments of the wine, thereby preventing them from oxidizing. The wine emerges both darker and brighter. When toasted the positive aromatic compounds are boosted, including vanilla, clove and especially coconut. In addition, a class of compounds comprised of several sugars (hemicellulosey) add carmelized products which have a sweet, toasty quality and help contribute to the body of the wine. Our 2013 Pinot Noir was aged for 18 months on the lees (sur-lie) in 50% new, Burgundy French Oak barrels.
