Wine Makers Notes: This black-hearted brooding wine with its silk drapery of scent, as I swirl it around, the aromas seem to pull me headfirst into the glass. It enters and saturates me with a field of wild currant and black cherry. The intense, dense ruby hue, expresses a bold bouquet that fills the nose with incredibly complex bramble, coffee, and truffle flavors, with a come-hither quality-indiosynctratic!

Length And Finish: Pinot Noir has a feral caprice which gives the impression of power. There’s something at the back of the wine, it’s the mineral taste of the earth where the vines grow. More a texture than a flavor, it counter balances the wines fruitiness, a taste of furious passion. An experience
that enriches life. A whole range of delicate thrills murmur!

Oak Barrel Notes: Oak and wine support each other in a way that truly brings out the best that both can offer. Barrels have been used throughout the ages. They contribute the tannins and flavor compounds we are looking for in our wines. These tannins have the desirable ability of bonding molecularly with the color pigments of the wine, thereby preventing them from oxidizing. The wine emerges both darker and brighter. When toasted the positive aromatic compounds are boosted, including vanilla, clove and especially coconut. In addition, a class of compounds comprised of several sugars (hemicellulosey) add carmelized products which have a sweet, toasty quality and help contribute to the body of the wine. Our 2012 Pinot Noir was aged for 18 months on the lees (sur-lie) in 50% new, Burgundy French Oak barrels.
